Cuttlefishes in Zimino
Second

    Very easy recipe, doesnt take so much time to prepare and its very tasty.. 

Ingredients for 6 people: 

700gr. cuttlefishes
2 fresh tomatoes
1 onion
1stem of celery
50 gr. choped parsley
3 bunches of bietole
oil
pepper
salt 
 

Clean and cut cuttlefishes in little strips. Let fried for 5 minutes in a terracotta pot (or normal if you dont have at home, but the result its different) pasley, onion and celery all choped before, with half wine glass of oil, then add just the leaves of bietole, cover the pot and cook for 10 minutes. Let cold down and then add the fish, salt and pepper and let cook for  20 minutes. Peel the tomatoes, put in the pot and let cook for 30 minutes.

You can serve with an aromatic wine, i suggest you a gewurtztraminer of north Italy..... (Marco Bentivoglio)
