Steak Hach? M?dori Second Ingredients for 2 people
400 gr. ground fillet steak 100 gr. Dried porcini mushrooms in slices 100 gr. White grapes ?Italia? 1 glass of white wine 1/2 red onion 5 spoons of extra virgin olive oil 4 pinches of salt 2 pinches of black pepper
Ask the butcher to make two hamburgers, 200 gr. Each, with the milled fillet steak; if there isn?t the fillet, specify to the butcher you have to eat it raw, so he will give you a piece without fat and of good quality. Put the dried porcini mushrooms in a bowl with hot water and keep them inside for half an hour until they revive. Put the onion and the extra virgin olive oil in a pan and cook it slowly until it softens; add the mushrooms, add part of the glass of white wine and the grapes and then increase the flame and mix for two or three minutes. Remove the sauce from the pan. Add some oil back to the pan and when it becomes very hot, put the two hamburgers in, after having salted and peppered them only on one side. After two minutes turn the hamburgers and add the remaining wine, the mushrooms, and the grapes with their wine. keep the flame high until the wines evaporates and serve it!
Curiosity This dish is a typical French one; the steak hach? doesn?t exist in the Italian culinary tradition. The most difficult part for you will consist in persuading the Italian butcher that what you are asking is absolutely normal. In Italy milled meat is mainly used to make meat balls ?polpette? or to fill vegetables and hamburgers are considered poor food; a butcher would never use such a precious meat, like fillet steak, to make simple hamburgers. You will probably have to discuss a lot. At the end of the preparation you won?t have a real sauce but I think that this variety of flavours and consistencies make the meat very tasty and sweet, perfect for a romantic dinner.
