Ogni vino ha le sue caratteristiche ( colore, odore e sapore ) e per ogni piatto che abbiamo dovrebbe scegliere il vino adatto per sottolineare i sapori sia il vino e il cibo .
In generale , i vini dolci va molto bene con torte e dolci , ma a volte si accoppiano perfettamente con alcuni formaggi .
Nella parte meridionale del Lazio , in provincia di Latina , la viticoltura è diffusa in Agro Pontino , una pianura paludosa tirato fuori dal mare e recuperato attraverso una rete di canali artificiali .
E ‘ in questo settore , contro il mare Tirreno e favorita da un clima mite e costante , che uno dei più rappresentativi dei vini dolci bianchi del Lazio si produce : il ‘ Moscato di Terracina ‘ , ideale per bere con dolci e pasticcini duri .moscato-di-terracina_lazio
Il più grande produttore di vino Moscato nel Lazio è Azienda Sant’Andrea , produttore del Moscato di Terracina Passito ‘ Capitolium ‘ , un vino passito bianco dolce fatto con uve Moscato di Terracina .
Questo vino ha un colore giallo dorato con profumo intenso e persistente di uva Moscato , arancia candita , confettura di albicocche , miele e vaniglia . Le uve vengono raccolte quando sono molto mature , poi si sono appassiti per due mesi , dopo la vinificazione , il vino viene messo all’interno di piccole botti di rovere per 6 mesi . Questo vino è eccellente con torte alla crema , frutta secca, torroni , e ‘ tozzetti ‘ (biscotti tipici essiccati) nonché con formaggi saporiti come il Gorgonzola .

Lazio produzione di vino è costituito da circa il 90 % dei vini rossi bianchi e solo poche .
Nella parte settentrionale della regione , in provincia di Viterbo , c’è Gradoli , un villaggio situato sulle colline del lago di Bolsena . Ecco un vino rosso dolce è prodotto : ‘ Aleatico di Gradoli ‘ , da uve Aleatico . E ‘un vino raro compiuti in questo settore solo da due società :
– Azienda Falesco : Aleatico ‘ Pomele ‘ . Un vino rosso dolce da uve Aleatico . Colore rosso rubino , con profumo intenso di fiori rossi e ciliegie . Essa ha sapori affascinanti e piacevoli. Perfetto alla fine del pasto , con dolci rigidi o come liquore da solo .
– Azienda Trappolini : ‘ Idea ‘ Aleatico . Vino rosso dolce da uve Aleatico . Colore rosso rubino , con profumo intenso di rosa rossa , confettura di prugne e sapori morbidi e avvolgenti di frutta rossa matura . L’uva , una volta raccolta, viene in parte appassito farlo diventare più dolce e poi vinificate .
Ottimo con i biscotti di noci e ‘ tozzetti ‘, quando inzuppati dentro

I due tipi di vino di cui sopra ( Moscato di Terracina e Aleatico di Gradoli ) sono vini rari perché sono fatti con uve che crescono solo in una piccola area . Si tratta di una esperienza unica e straordinaria per questo territorio perché questi vini , anche se prodotto in piccole quantità , riescono ad emergere nel mercato per la loro unicità e spesso guadagnano importanti riconoscimenti nazionali e internazionali .
