Amarcord dei panifici di Roma

Quando ti trasferisci da una città all’altra ma soprattutto da un paese all’altro, come è stato per me per il lungo soggiorno a Manhattan o a Parigi a tutti gli ostacoli amministrativi e burocratici pensi dimenticando spesso che quello che ti mancherà di più è il sapore del pane e della pizza calda di Roma.

Quale meraviglia sono le baguette nei primi mesi del soggiorno parigino, o i bagels freschi la domenica mattina a New York, ma passati sei mesi anche i muffin più golosi vengono a noia. Vorresti un cornetto fatto da una pasticceria invece dei burrosi croissant o un filone di pane con la crosta, o la pizza bianca unta d’olio che macchia il sedile della macchina e la borsa.

Come fai a condividere con un australiano cos’è una bruschetta (una fetta di pane bruscato- e non fritto- condito con aglio olio e pomodoro) se non hai un filone di pane che pesa almeno un kilogrammo con gli alveoli larghi di una lievitazione prolungata ed una crosta fragrante il cui suono mentre lo tagli fa girare cane e gatto contemporaneamente?

A scuola negli anni 70 durante la ricreazione non c’erano le merendine e pochi ragazzi avevano una tata che gli preparava una torta, gli altri tutti, mangiavano un pezzo di quella pizza bianca unta d’olio e carica di sale o sporcavano il banco con la mozzarella che filava su quella rossa di pizza.

L’alternativa era un panino composto da una rosetta (pane stampato a forma di rosa lievitato fino al punto di essere vuoto internamente) perfetta per essere riempita con la mortadella o con il salame.

Questi sono i profumi e le consistenze del pane e della pizza romana che più mi sono mancate negli anni.

Pane, panini, biscotti fragranze e profumi li puoi ritrovare ancora a Roma perché spesso quegli stessi ragazzini che andavano a scuola con la pizza fatta dal nonno hanno rilevato il forno ed attualizzato l’offerta.

Dietro casa di mia nonna, appena prima di intravedere Santa Maria Maggiore c’è uno storico panificio oggi tempio di pellegrinaggi per aperitivi. La qualità degli ingredienti è sempre stata parte della storia di una famiglia che dal 1929 ha sfornato pane, pizza e dolci come se non ci fosse un domani in un ambiente curato con un’offerta sconfinata. Cornetti, torte, fritti, tanti tipi di pane (varietà regionali napoletane, abruzzesi e siciliane) e pizza (qui la chiamano ciabatta cotta al suolo) è indimenticabile ed imperdibile anche se potrebbe costarvi caro provare quest’emozione proustiana!

In un piccolo locale, stipato fino al soffitto potreste trovare il fornaio, pizzaiolo, chef e star televisiva : Bonci in persona. Se l’aveste perso nella prova del cuoco – programma Rai disponibile su Youtube o su Ray Play- ha insegnato Urbi et Orbi la produzione di pani e pizze svelando tutti i trucchi di una tradizione millenaria di panificazione com’è quella romana. Non a caso in questo piccolo spazio troverete il vero pane di Lariano o ai multicereali, di segale, bianco, sciapo, pizza bianca, rossa e pizzette.

La storia dei forni di Roma comincia qui, in un negozio vicino a Campo de’ Fiori, dove insisteva un forno già dalla prima metà dell’800, rilevato da Marco Roscioli nel secolo scorso. L’attività ora è passata ai quattro figli Anna, Pierluigi, Alessandro ed Elena, che allo stesso tempo gestiscono il ristorante e l’enoteca.

Farine e tradizione hanno reso questo forno uno dei migliori della città. L’offerta è praticamente infinita e prevede l’utilizzo di farine integrali, lieviti naturali, pasta acida e biga. Le pizze rammentano quelle dell’infanzia col piccolo bordo croccante e il centro morbido e ben condito. I dolci di questo panificio non hanno nulla da invidiare alle madleine di Proust osservando sempre una declinazione romana troverete quindi le crostate (ottima quella ricotta e cioccolato), i ciambelloni, i biscotti e la gastronomia.

Il forno di Campo de’ Fiori è il forno della piazza dov’è stato arso Giordano Bruno, dove c’è uno dei piu bei mercati rionali del centro storico, rappresenta il cuore pulsante della romanità, lo spirito verace della panificazione della Capitale.

Al forno si va per un pezzo di pizza, regna su tutte la bianca – la migliore di Roma – croccante, oleosa e sapida al punto giusto, semplice o da farcire con la mortadella. Il secondo bancone offre dolci tradizionali, biscotti, ciambelloni e crostate.

Oggi Gianfornaio ha 5 punti vendita e con un veloce giro sul sito potrete apprezzare le meraviglie offerte da questo marchio perché non è piu solo un forno ma un brand che diffonde l’arte della panificazione romana. Io ricordo lo stupore dei ragazzi del muretto all’apertura del forno di Ponte Milvio negli anni 80 perché avrebbero potuto trovare finalmente la stessa pizza del centro accanto al Tevere. Questo forno nasce accanto al mercato rionale di Ponte Milvio come il forno di Campo dei Fiori. Sono stati i commercianti i primi ad apprezzare l’introduzione delle vecchie la farine e la capacità di rendere attraente una panetteria trasformando uno spaccio in un locale alla moda.
