Cream of broad beans and leek sprouts

Ingredients
  1. Dried broad beans 150-200gr / fresh 350-400 (serves 4)
  2. half a carrot
  3. Half leg of celery
  4. Dried tomatoes 4/6
  5. pepper to taste
  6. laurel
  7. Croutons
  8. Aromatic herbs
  9. Leek sprouts
  10. extra virgin olive oil
Instructions
  1. To make it lighter avoid fried, simply putting to cook covered with water: broad beans, a small carrot and a stick of celery, along with a few bay leaves dry. Simmer until the cream forms on their own, making sure it does not dry too much, in which case provide adding liquid. Then pass it to the mixer or food mill if the beans are cool so as to eliminate the peel, indigestible like all legumes.
  2. Prepare the croutons also using old bread sliced and diced into cubes which are then baked in the oven with a little oil and the herb you prefer: thyme, oregano, rosemary. For the garnish julienne dried tomatoes blanched and regenerated.
  3. Put the cream in soup plates, add black pepper, cheese for those who wish, croutons, and place in the center dried tomato. Add rain to the leek sprouts and drizzle with extra virgin olive oil raw.
